Vicki's Tomatoes Peel some very ripe small tomatoes (20 seconds in boiling water will loosen the skins) Put in a bowl or big ziplock bag with Italian dressing and extra garlic and salt and pepper. Maybe add some olive oil and wine. Let marinate in the refrigerator for a day. Serve cold. We usually make this in September when the homegrown tomatoes start to get smaller and more plentiful Italian Salad Cut cherry tomatoes in half or just cut slits in grape tomatoes. Cut chunks of fresh mozzarella and cucumber or zucchini about the same size. Add a can of small pitted black olives. Red or white onion if you like onion. Add garlic, salt, Italian herbs, pepper, olive oil and vinegar. Chill for a few hours or overnight. Salsa. Chop tomatoes, onion, and green or yellow pepper. Put a seeded jalapeno pepper and a tomato in the blender and blend thoroughly. Add to chopped veggies. Add salt, maybe garlic powder and hot sauce. Add more tomatoes to make it milder, more jalapeno to make it hotter. Serve with fresh fried tortilla chips. |

Cranberry Salad 1 lb. fresh cranberries 1 cup sugar 1 #2 can crushed pineapple 12 oz. miniature marshmallows 1 pint cream, whipped or one pint Cool Whip Grind cranberries in food grinder or blender. They are easier to grind when frozen. Blend ground cranberries with sugar and let stand overnight. Drain pineapple and combine with miniature marshmallows. Let stand overnight. Combine the two mixtures and fold in whipped cream or Cool Whip. Spoon final mixture into jello molds, cupcake tins, baking tins or other unmoldable containers and freeze. Unmold and let stand 15-20 minutes before serving. Note: This makes lots. I usually get two ring molds and one small mold out of it. I often take this to a potluck. If I'm doing that, I unmold it, wash the mold, line it with plastic wrap and then put the salad back into the mold. It's easier to transport this way than it would be on a plate, and when you get to your destination, you just dump it out and peel off the plastic wrap. If you're going far, and if possible, put it in a freezer for a few minutes before dumping it out. *** Mexican Salad 1 med. can vegetarian beans in tomato sauce (meatless baked beans) Fresh tomatoes, cut in small pieces Cheddar cheese, cubed Green onions, chopped Salad dressing Lettuce, shredded or chopped for salad Tortilla chips Marinate first four ingredients in the salad dressing of your choice for several hours. The original recipe suggested Catalina or Creamy Thousand Island. I like to use French dressing (the creamy orange kind). At the last minute add lettuce and tortilla chips. I sometimes brown some hamburger in a skillet, drain it well and add it to the salad. It can be used as a main course. Joy |

happy thoughts (was IBKFergus is leaving ;-( )
Tonight it's DH's turn to cook. I'm trying a variant of the low GI
diet that includes minimising the carbs I eat after 5pm. This initially seemed like a huge challenge - our staples for evening meals are pasta-with-something, noodles-with-something, or rice-with-something. Tonight DH outdid himself. Diets like this I can live with! We are having mussels done Brittany (French) style - steamed fresh mussels (Australian black-lipped mussels, not NZ green-lipped mussels) with white wine, a little cream, a touch of curry paste and loads of parsley. Normally the delicious sauce is mopped up with crusty white bread, but since that is verboten to me, DH is steaming loads of broccoli and fennel bulb and I'll mop up the sauce with that. The slightly creamy sauce should go really well with the vegetables. YUM! And a crisp, fresh "Pink Lady" apple for afters if I feel like it (moderate consumption of fruit is allowed). Tish - dang, it's only 5:30pm and I'm getting hungry just thinking about dinner! |
