Yowie -- Thanks, Yowie. I guess my question wasn't worded well, but you answered what I really wanted to know -- that is, what the purpose is of smoking three times vs. once or twice. We do have fresh ham and smoked ham (also smoked turkey, etc.), and some smoked products will be known by the type of wood (such as mesquite) or added flavoring (such as honey) used; but I have never heard of double smoked or triple smoked. MaryL We've home-cured and smoked hams before. After about 2 to 3 hours, no more smoke flavor penetrates the meat, to be honest. But, maybe this is an entirely different method. I'm going to have to look into it - we've got so much cured, but unsmoked pork in our side freezer. kili |

Not the same, just look a lot alike. It is too hot where we live now to grow most root vegetables successfully. The beet greens I grew up on were the tops of young beets, usually when my Grandmother thinned the beets. But they are available at produce stands where the weather is milder. Jo |

I suspect "Black Forest" ham might be the same as triple-smoked - it seems to be super-smoky in flavour, like the genuine article by that name from Europe. |
