$1
- $1.25/can.

I've got a good recipe for no bake bread pudding made from old cinnamon
rolls if anyone is interested.

It's been a few years, but here goes. Minestrone is essentially a hearty
vegetable soup. Many people add unsmoked pancetta which suddenly makes it
not a vegetable soup It's a very flexible recipe. Add or subtract
whatever you wish.


1 medium yellow onion, chopped
2 cloves garlic, minced
1-2 stalks celery, diced
a carrot or two (I think I shredded two into the soup as I'm not
particularly fond of biting into carrots but they impart a nice flavour)
1 large zucchini, or a couple of medium ones, diced
2 cups well washed spinach leaves
1 cup flat-cut "Italian: green beans (I used frozen)
1 can white beans (if you can't find cannelli beans), rinsed and drained
1 can red kidney beans, rinsed and drained
2 cans diced tomatoes
3 cups. beef (or chicken) broth + enough water as needed
1/2 tsp. dried basil or marjoram
1/2 tsp. dried sage
salt & pepper to taste
1/2 c. cooked tiny shell or other small pasta, al dente
Freshly grated Parmesan for garnish

Cook onion and garlic in olive oil until soft in a fairly deep pot. Add
tomatoes, celery, carrots, zucchini, spinach, beans, broth, water, salt &
pepper and other herbs. Add pancetta if you want to, but make sure it's the
unsmoked (therefore unsalted) kind. Cover and simmer 1/2 hour; add water if
needed. Add the pasta and heat through. Taste the broth and adjust your
seasonings. Cook it down a bit if you want to. Grate fresh Parmesan over
each bowl.
