IIRC, scallions are just the sprouted part of an onion. MY MIL told me
years ago that you have to bend/break that sprout for the bulb to grow...
dunno if that's really so, I am NOT a gardener or farmer at all! but makes
sense to me

Assuming your scallions are my spring onions, no, they aren't quite the same
(may be the same species, but a different variety).

My parents were given a large bunch of spring onions (with roots), so large
they had no hope of eating htem all befor ehtey started to rot. So Dad
thought he'd plant them and let them develop into regular onions. The
didn't - they never developed an enlarge bulb. Even though they got alot
bigger, they were always the shape of a leek.

I see. So real scallions/spring onions have a small bulb which doesn't
grow. Whereas the sprouts from a large bulb (ie, onion) are a related,
species, but not exactly the same?

Has anyone eaten the green sprouts from a regular onion? I wonder if they
taste the same. I didn't eat the ones I had in my kitchen - I just watched
them grow, and eventually they wilted, so I composted them.

I have never eaten the sprouts from a regular onion, but my parents used to
have a nice backyard garden. We had scallions, and they would never develop
into the type of large onions that I think you are describing. A scallion
would get a little larger -- and hotter and sometimes a bit "tough" -- if
left in the ground too long, but they would never grow into one of those
extremely large bulbs.
