Its getting close to the Holiday season, thought we might share a few of our
favourite recipes that we traditionally use to celebrate with.

Pavlovas are traditionally served at Christmas gatherings here in Oz
(remember, its midsummer here), but hey, pavs are good *any* time of the
year!

6 egg whites
440 g (15 oz) caster sugar
1 tsp vanilla extract
1 tbsp cornflour
1 1/2 tsp white vinegar
250 ml whipping cream
Passionfruit pulp
kiwi fruit slices
strawberries - dehulled

Preheat oven to 180°C. Beat egg whites until stiff peaks form. Add sugar,
1/3 at a time, allowing each third to be well incorporated so that you end
up with a thick glossy meringue. Fold through the vanilla, cornflour and
vinegar.

Spread in a high circle on a sheet of baking paper on a tray. Place into
oven and lower temperature to 120°C. Bake for 45 minutes.

Turn the oven off, leaving the pavlova to cool inside the oven.

Place cold pavlova on a serving platter and cover with whipped cream.
Drizzle the passionfruit pulp over the cream and decorate with strawberries
& kiwi fruit slices, or use different fruits to your personal taste.

Keep cool until ready to serve - but don't keep for too long as they do tend
to melt.

We live on Pavs in New Zealand and have them all year round.
This is my favourite recipe of the moment (I get passions for certain
recipes and hammer them until DH starts commenting)

PORK SPARE RIBS

2 kg. Pork Spare Ribs
1 Cup orange juice (I prefer fresh oranges as we have a tree but it is
OK with the bottled real squeezed orange juice)
4 teaspoons salt reduced soya sauce
1 " crushed garlic
1 " crushed ginger

Bake uncovered in preheated oven 180c for 45 minutes, baste frequently.

I have it with rice.

ROFL! Bearing in mind that a lot of Finns bear a grudge to Sweden, this
might not be so far-fetched.

I think we've had the swede/Swede discussion on rpca before.


Why do Finns have a grudge against Sweden? Is it because their cars
are too safe and boxy looking? Maybe it's their controversial
cultural exports, like ABBA.

It's just neighbourly bickering. Like the French and the English. Speaking
of controversial cultural exports, a Finnish band won this year's MTV
Scandinavia Award for best Scandinavian band. ;o)

Hey! I love ABBA! Volvos are too expensive though... at least on
this side of the pond.

Hey! I love ABBA! Volvos are too expensive though... at least on
this side of the pond.


Is your favorite song Dancing Queen? I've liked some of their
songs. What interests me sometimes about them are their lyrics - they
can be so strange! I remember there was one song that had the line,
"The gods... their minds as cold as ice". Swedes must be polytheists
who worship gods born from the ice, like the Vikings!

Hey, Vic's not the only one who likes ABBA here! My fave is "Fernando". FYI,
Tak, Vikings were Norwegians (I only know this because I have some Norwegian
friends), not Swedes.
Gods lived in Valhalla (sp?) but I bet Sweden is every bit as cold as
Norway, and Finland, too. ABBA has its cult fans, of which I'm one. Several
ABBA websites with their history, etc.

AAMF, the term "Viking" was thought up in the 18th or 19th century, and
applied to the Scandinavians of historic times, c. 8th to 11th century
(don't know the exact time slot, but they did occupy a large part of the
British isles from the 9th to the 11th century), so it pretty much includes
all Scandinavians, Swedes, Norwegians, Icelandic, Danish. They all had the
same gods. The Finns had pretty much the same ancient gods, but since they
don't speak a Scandinavian language, they had their own names for them.
Anyway, I'm not surprised that Norwegians want to claim the term Viking for
themselves. Who wouldn't want to hail from great seafarers who looted and
pillaged around the world. ;o) (Actually, only a small part of the "Vikings"
did that - most people stayed at home and farmed the land and tended
cattle.)

The only music my 14-year-old niece will listen to is ABBA, and she wasn't
even born when they quit!

Oh yes, Viking Kittens is too cute! And I love Led Zeppelin.

Evelyn recently posting about going to see a Wagnerian opera reminded
me of how much I love the story behind Wagner's Ring cycle. As a
young god, Wotan consolidated power by making many treaties, until he
became the ruler of the gods. He wrote the treaties in runes on his
divine spear. The treaties made him powerful, but also bound his
actions, making it necessary for him to act circumspectly. When a
ring is forged from the Rheingold, Wotan wants to retrieve it, but he
cannot do so directly, so sires a mortal hero who he can manipulate
into slaying its owner. Unfortunately, his plan goes awry, and by the
end of the opera, Wotan's spear is destroyed, and Valhalla itself is
in flames.
