OK, I wouldn't touch Tofu with a ten foot spoon, but some people can
actually choke it down, so here's a site that has tofu recipes:

Okay, here's a good veggie recipe:

2 yellow summer squash, sliced
6 quartered boiling potatoes (red or white rose)
fresh green beans, cut
baby carrots, small package or to taste, leave them whole
Herbs du Provence spice mix (couple of pinches) - this is the important
ingredient!
butter (about 2 tablespoons, or more, to taste)

Bring water to boil on top of stove in Dutch oven. Add potatoes and baby
carrots and reduce heat to low boil for about 30 minutes (check this because
I live at a high altitude (5200 feet) may cook faster at lower altitudes).
Add sliced summer squash to pot then cook 20 more minutes; when the timer
goes off after this, add cut green beans and cook for 10 minutes. Total
cooking time: approximately 1 hour. Serves 4.

1 pound extrea lean ground beef, fry it till brown and then rinse very
well, add a jar of spagetti sauce and heat thouroughly, in the mean time,
clean out 6 red peppers, cut off tops and clean out seeds, place in slow
cooker or caserole dish,
then add 1 cup non fat cottage cheese, and stir, divide evenly amongst all
pepers, then grate a small amount o mozzarella cheese on top of all peppers,
cook in slow cooker about 1 hour or in oven for 45 minutes.
did in
each of these is one meal of about 350 to 400 calories depending on what
sauce you use, have fun and dig in!
