Default We're home!

As Matthew said, Orlando was a blast... it was wonderful to spend time
getting to know Matt and Pam and Rob and the kids and Charleen and
Kili and their husbands in person, and we really had a lovely weekend.
I owe a huge debt of gratitude to whichever person/s made the gas fund
for the weekend (we were also pleasantly surprised at how little it
took to get there - John's sisters live up to the north-east of
Orlando and somehow it takes nearly twice as much gas to get to them
as it did to get to St Cloud!)

The girls were very glad to see us home again... they were miffed that
we went away and 'abandoned' them yet again, but not so much so that
they wouldn't beg for our chicken lunch... (and yes, we gave them a
smidge!)

Pam, I hope you're going to put the photos that Mandy took online -
from what I saw they were much nicer than mine and I'd love to be able
to put them in my scrapbook...

I have some pictures; I thought I took more. I'll try to post them to a
photobook website.


I took a few but I just put them onto my computer and they're
universally terrible... I might be able to make pretty scrapbook pages
but I suck at taking pictures of groups of people!

Thanks, we got in at 7:30 tonight ourselves and we had a great time. Folks,
if you get a chance to meet John and Karen, Matthew, Charleen and David,
Kili and Alan, or any of the other members of the group. . . take it and
hang onto it tight. They're wonderful people and we had a blast. The gas
fund helped us too and we appreciate it much.

I haven't looked at the pictures Mandy took or the film that Mike video
taped, but plan on it this week. I will post the URL once I get it posted
to my photo bucket account. BTW. Mandy takes the best still pictures of
the lot of us. The jury is still out on Mike's video taping ability. It
can't be worse than Rob's and should be better than mine.

Matt, can you send the URL for that "Poor Kitty" video that you showed
Mandy? She can't find it and wants me to see it too. Charleen, can you
send or better yet, post the recipe for the spaghetti sauce that you made
for Sunday, Rob also wants your lasagna recipe. The gang also want me to
get Karen's brownie recipes. You all fed us too well.

Of course you can have the recipes The chocolate Brownies were
Barb's from rec.food.cooking, with some cocoa powder added to make
them a little darker, and the butterscotch brownies were my own
recipe.

Kajikit's Butterscotch Brownies

2 sticks unsalted butter
2 cups brown sugar
2 large spoons golden syrup (*)
4 eggs
1 tsp vanilla
3 cups flour
Pinch salt
1/2 cup coconut
1/2 cup chocolate chips
1/2 cup nuts (I didn't use nuts but macadamias would be fantastic.)

NOTE: Golden Syrup is an Australian/English cooking ingredient,
similar to but tastier than corn syrup. You could probably use dark
corn syrup or light treacle in a pinch if you can't get golden syrup
from an English Grocers.

Preheat the oven to 350F and line a rectangular cake pan with baking
parchment.

Melt Butter and sugar in the microwave in a large mixing bowl. Spoon
in syrup and beat in eggs. Gradually add in the flour and mix well.

Scoop the mixture into the cake pan and spread it out with a
knife/spoon. Sprinkle coconut, chocolate chips, and nuts over the top
and swirl them into the brownies with a knife, leaving a lot of them
on top.

Bake at 350 for 30 minutes and allow to cool in pan.

Barb's Famous Orgasmic Chocoolate Brownies

1 cup unsalted butter
4oz unsweetened baking chocolate
2 cups sugar
4 eggs
1 tsp vanilla
1 cup nuts, optional
1-1/3 cup flour
1 tsp baking powder(*)
pinch salt.
2 tbs cocoa powder
1/2 cup chocolate chips, optional

* Leave the baking powder out for denser brownies... I didn't use any.
Baking powder makes them more 'cakey'. Cocoa powder was my own
addition to the recipe - I like my brownies really rich but not too
sweet. Do NOT use sweetened bakers chocolate under any circumstances
or the brownies are candy-sweet (ask me how I know!).

Preheat the oven to 350 degrees and line a rectangular baking pan with
baking parchment.

Melt butter and chocolate in a mixing bowl in the microwave. Stir
until smooth. Mix in the sugar, then beat in the eggs one at a time.
Add the flour and baking powder (if using), and sift the cocoa powder
over the top. Mix it all in well and add the nuts (if using) or
chocolate chips.

Bake at 350 for about 35 minutes (only takes 30 in my oven.) Do not
overbake. Toothpick may havefudgy crumbs on it but not wet batter.

May I add coat the brownie pan with cocoa instead of flour?
