Hello,

I purchase the whole loin, which hasbeen selling for $1.99 for quite a
while now; throw it in a big pot;boil (not too much water) it a
little; not too much cooking because itis dry, tasteless, crap meat;
grind it up in the food processor and feed it to the kitties. It makes
for easy feeding time, and they love it; even better than beef. I
freeze some for feeding later in the month.

Lots of things Lesley! Kinda OT for here but what the heck.

Marinate is the easiest way.

1/3 cup Mae Ploy or Flying Duck ''Hot Sweet Chicken Sauce'
2 TB soy sauce
1 TB vinegar

Let marinate at least 1 hour, 4 is better.

Cook at medium high in a fry pan with all the marinade (cast iron preferred)
for 5 mins one side, flip and 2 mins the other. Turn off and let rest.
Serve with marinade. Should still be pink or even a bit red at the center.

Actually, it's not OT. This is how we handle trolls in RPCA

follow-ups trimmed to just rpca

If it's a tenderloin of pork, I quite like it stuffed with an
apricot and pesto stuffing.

Toast your pine nuts in a dry frying pan, then crush with a
pestle & mortar. Mix with some chopped basil leaves, finely
chopped dried apricots, olive oil, and a little grated parmesan
cheese. Add one clove of crushed garlic, or If you like spicy
food, add some freshly chopped red chilli (de-seeded).

Using the handle of a wooden spoon or a large meat skewer, make a
hole along the centre of the pork loin (turning the joint into a
ong hollow tube), and force the stuffing into the cavity (using
the spoon handle again). Then sear the joint in a very hot
seasoned pan, (note: season the pan, not the meat), then place
into a roasting bag (or foil-wrap), and cook in a slow oven for
about 40 minutes. Allow to rest for 10 minutes before carving
into medallions, serve with vegetables of choice.

Yes. I have used that sort of cut in sweet and sour pork, coated it in
Shake & Bake and shoved it in the oven, pan fried, grilled it, and am
willing to try most things with it.
