Lesley Slave of the Fabulous Furballs Hello, I purchase the whole loin, which hasbeen selling for $1.99 for quite a while now; throw it in a big pot;boil (not too much water) it a little; not too much cooking because itis dry, tasteless, crap meat; grind it up in the food processor and feed it to the kitties. Cook at medium high in a fry pan with all the marinade (cast iron preferred) for 5 mins one side, flip and 2 mins the other. Turn off and let rest. Serve with marinade. Should still be pink or even a bit red at the center. |

Toast your pine nuts in a dry frying pan, then crush with a pestle & mortar. Mix with some chopped basil leaves, finely chopped dried apricots, olive oil, and a little grated parmesan cheese. Add one clove of crushed garlic, or If you like spicy food, add some freshly chopped red chilli (de-seeded). Using the handle of a wooden spoon or a large meat skewer, make a hole along the centre of the pork loin (turning the joint into a ong hollow tube), and force the stuffing into the cavity (using the spoon handle again). Then sear the joint in a very hot seasoned pan, (note: season the pan, not the meat), then place into a roasting bag (or foil-wrap), and cook in a slow oven for about 40 minutes.
