With tomatoes, put the cut side UP, or you will squish them all over the place. Hold in place with fingertips together, and start slicing with the knife blade running down the fingernails. Soft flesh is kept out of the way using this method. It's much easier to show than describe! My knives are thin and sharp enough that they'd pare my fingernails away if I did it like that. But it'll work with a thick-bladed knife that isn't razor-sharp. My fingernails are usually reasonably long, so I hold the veggies I need to cut with them rather than my fingers (keeps the veggie still, as well). That way, if I'm going to have a knife accident, I'll lose a nail rather than a finger. It isn't fool-proof, but has saved my fingers too many times to count. My 'best' accident whilst processing vegetables was managing to peel my left index finger with a veggie peeler. When I get home, I can up-load a picture of the resulting scar if anyone wishes.
