Chicken with Lemon Cream Sauce

Rich and elegant.

6 chicken breast halves, skin and bone removed
1/2 cup butter
Salt and black pepper to taste
2 tablespoons sherry
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1 cup whipping cream
Grated Parmesan cheese
Lemon slices for garnish

Sauté chicken in butter in large skillet, turning to lightly brown on both
sides. Season with salt and black pepper and place in baking dish. Add
sherry, lemon peel and juice to butter in skillet. Stir and cook for 3 to
4
minutes. Check seasoning. Stirring constantly, gradually add cream to
since.
Remove from heat and pour over chicken. Sprinkle parmesan cheese on
chicken.
Bake at 350° for 20 to 30 minutes. Garnish with lemon slices.

Serves 6.

OOOH....

Variation on a theme of what I do to a corn-fed chicken. Mine doesn't have
cream in it.

Cheers, helen s

I'm very sorry guys. I knew it was bad judgement to even call
attention to the troll, but I realized it too late. It won't happen
again.

Pfft. You don't have to apologize. I daresay all the people with
working killfiles didn't see who you were talking to anyway, and the
ones that don't certainly don't pay any attention to him/her/it. Don't
let 'em get to you, hon.

No apology necessary. Gawd knows I did the same thing myself - the hardest
thing to do is allow an untruth about you to go unanswered, even when your
better judgment tells you to ignore the trolls.

The jerk must be in my killfile already, as I didn't see their post. Don't
worry about it Cheryl. If someone were to post nasties about me (which has
been done) I'd have a hard time not answering back too. Take care and keep
in here. They can leave if they don't like you being here.
